Greasy Spoon Syndicate x PDC

Greetings!  My name is Adam Witherspoon. 

I’ve been a self-proclaimed “libation pirate” in the MPLS hospitality community for the past decade, and I’m here to briefly plunder your airwaves regarding the Greasy Spoon Syndicate, a project I have chef-ed up. 

PDC and GSS will partner for a series of apero bar pop-ups in some inspiring and mysterious nooks of the city. Stay alert for the juicy deets in the weeks to follow, but if you’d like to have an immediate picture painted for you, keep on reading!  Otherwise, feel free to digitally signal to me to kick rocks and hold tight for the meat and potatoes yet to come…!

 

On Saturday, April 6th I’ll be hosting a sneak preview into the heart and soul, albeit not the function, of what the Greasy Spoon Syndicate apero bar will feel and taste like.  I’d be tickled if you'd join me and some of my pals for this debut GSS pop-up where we'll enjoy the blissfully ordinary things in life to the fullest extent.

Greasy Spoons are a cornerstone of American dining.  Momentarily ignoring the grease drenched hashbrowns, stacks of flapjacks, and the mid-century booths, they are a community hub that people seek out for recognition, acceptance, and belonging.  They are assigned to everybody and nobody, and embody the spirit of old world cafes, albeit with a predilection for all things artery-clogging and sinfully craveable.  


Syndicates, by definition are: “a group of persons or concerns who combine to carry out a particular transaction or project”.  


The seeds of culture are often sown by a single actor's vision; or through the collaboration of a small collective of counter-culturists. However, culture only blossoms when a group of persons combine to carry out the particular project of integrating said culture into the larger fabric of society.  


The Greasy Spoon Syndicate is an Apero Bar.  A space meant to be the connective tissue bridging the in-between moments of your life in a meaningful, charming, and value-driven manner.  The GSS is inspired by the cafe cultures of Copenhagen, France, and Italy, as well as pivotal figures and mentors in my own life. The offerings emphasize the richness and diversity of Italian and American drinking cultures, blended with Americans' love of carefree, whimsical snacking.
