Chanterelle Martini

chanterelle infused vodka

• yellow chanterelles

• good vodka

equipment —

• 32 oz mason jar

steps —

1. Fill a mason jar with chanterelles. Cover with good vodka. The amounts don't matter much, the more mushrooms you use, the stronger the flavor will be. 

2. Allow to sit a a few weeks. Strain if you wish, but I leave the chanterelles in and use them to garnish!

• 1.5 oz chanterelle vodka

• .75 oz rosso vermouth

• .75 oz blanc vermouth

• ice

equipment —

• cocktail shaker

• bartender’s spoon

steps —

1. In a mixing vessel filled with ice, combine all ingredients.

2. Stir until well-chilled and strain into a coupe glass. Garnish with a chanterelle. Serve immediately.
